Radish Avocado Toast
This simple, easy breakfast dish is great for a morning boost of energy. Full of earthy, heart-healthy flavors, this pairs perfectly with poached or hard-boiled eggs as well. For a lower sodium version, omit the salt. Additional toppings that pair well with this dish include diced cucumbers, diced tomatoes, spicy salsa, or diced pickled onions.
- 2 slices whole grain bread
- 1 large avocado (ripe)
- sea salt (to taste)
- freshly-cracked pepper (to taste)
- 1/2 cup radish microgreens

Place the bread in a toaster or toaster oven and cook until golden brown and crunchy.

While the toast is cooking, cut the avocado lengthwise and open the two halves. Take the pit out and slice the avocado vertically while it is still in the skin.

Take the toast out of the toaster.

Using a spoon, scoop the avocado slices onto the toast. One avocado half should fit one slice of bread.

Use a fork to gently mash the avocado slices, spreading it over the toast.

Season with salt and pepper to taste. Sprinkle radish microgreens over the top as a garnish.
